Nam phrik kaeng khua
5 large dried red spur chilies, seeded and soaked in water
10 shallots, sliced
20 cloves garlic
1 tsp. finely sliced galangal
1 tbsp. sliced lemon grass
1 tsp. salt
1 tsp. shrimp paste
Pound together dried chilies and salt until a fine paste is obtained. Add galangal and lemon grass, pound thoroughly.
Add the remaining ingredients, pound well after each adding.
