Phanaeng Curry Paste

Nam phrik kaeng phanaeng

 

5       large dried spur chilies, seeded and soaked

5       sliced shallots

10     cloves sliced garlic

1       tsp. finely sliced galangal

1       tsp. sliced lemon grass

½      tbsp. finely sliced kaffir lime rind

  • finely sliced coriander root

 

½      tsp. white pepper

  • salt
  • shrimp paste

 

Pound dried chilies and salt together well. Add galangal, lemon grass, kaffir lime rind and coriander root, continue pounding until mixed well.

Add shallots and garlic, follow with pepper and shrimp paste. Pound well after each adding.
