Pineapple Upside Down Cake Recipe

Serves 8-10

Ingredients

½ cup (1 stick) butter or margarine, melted

1 cup firmly packed brown sugar

1 can (20 oz.) pineapple slices, drained

8 Maraschino cherries, halved

1 package Betty Crocker Super Moist Yellow Cake Mix

1 cup pineapple juice

3 large eggs

½ cup vegetable oil

Baking Instructions

Preheat oven to 350 F.

  1. Melt butter with brown sugar in a saucepan until both ingredients mix well. Remove from heat.
  2. Pour the mixture butter into a 9×13 baking pan. Arrange pineapple slices on top of the mixture and place cherries in center of each pineapple, set aside.
  3. In a large bowl, combine cake mix, eggs, pineapple juice and vegetable oil.
  4. Beat with an electric mixer at medium speed for 2 minutes.
  5. Pour batter evenly over pineapple in the baking pan.
  6. Bake 40 minutes or until toothpick inserted in center comes out clean. Then, it’s done.
  7. Cool 10 minutes before remove from pan.  Invert onto serving plate.
